2. Will you play the songs on my play list? Can I request do/do not play lists and/or genres?

Obviously the questioning process can get very drawn out. You should feel free to inquire until you feel comfortable and ultimately "click" with your entertainer. Most clients know within the first few moments of meeting their prospective DJ whether or not they are going to sign a contract.
